This lot from El Silencio is a part of Qima’s Micro Lots and Special Reserve Series, which comprises unique coffees with a complex profile sourced from a single farmer or cooperative.

 

Grown in Palestina, Huila, at altitudes ranging from 1,700 to 2,200 MASL, this lot comes from María Rodríguez, a third-generation coffee producer carrying forward her family’s legacy. After the passing of her father, María took over the farm and began shaping its future - studying at Colombia’s National Research and Development Institute (SENA) and planting new varietals like Gesha, Pink Bourbon, and SL28 with a vision for quality and innovation.

 

The washed process is based on a dual-phase fermentation and pulping processes that use water. Starting with fermentation, the recently harvested cherries undergo a 12- to 24-hour period of fermentation. This crucial phase enables the coffee beans to imbibe the delectable notes from the surrounding coffee skin. Following this fermentation stage, the cherries are transferred to a traditional pulper. Here, the pulper adeptly segregates the coffee beans from their outer skin. The beans are moved to patios or dryers to initiate slow drying.
