Finca Santa Elena is a second-generation family farm, built and grown together over time, where coffee has always been at the centre of family life. In this new chapter, the focus has shifted fully toward specialty coffee, with the aim of sharing both tradition and a more intentional, quality-driven approach to production.

 

This is a family project in the truest sense - cousins, uncles, husband and wife all working side by side, connected by the same passion for coffee and a shared responsibility for every step of the process. From planting to harvest and processing, the farm takes an active role throughout, combining inherited knowledge with carefully introduced innovation.

 

At Santa Elena, traditional practices are supported by an agroforestry system using native trees, promoting sustainability while protecting the long-term health of the land. Each decision is made with patience and attention, always with quality in mind.

 

More than just a coffee farm, Santa Elena represents continuity - a commitment to preserving family traditions while adapting them thoughtfully for the future. Every harvest reflects the care, discipline, and respect for the land that has been passed down through generations.

 

Process.

The coffee is selectively harvested with only ripe cherries handpicked. It undergoes an initial 40-hour open-bag fermentation, allowing controlled cherry oxidation, followed by an overflow rinse before pulping. An anaerobic fermentation then takes place, with the coffee submerged in 210-litre tanks for 40 hours, after which a thermal shock is applied. Fruit yeast is used to inoculate the coffee, and the tanks are sealed for a further 30 hours. Drying and stabilisation are carefully managed, with the coffee sun-dried for 15 days and then stabilised for an additional 15 days to balance and settle the profile.
