Arriving at Finca La Piragua you’ll see rows of pitaya (dragon fruit) before you see coffee - that’s Alexander Vargas’ crop-diversity plan in action. Coffee is in his background, but around the early 2000s he struck out on his own, cleared scrubland, and planted the first trees that became La Piragua. He runs the farm with his wife, Lidia: he leads harvesting; together they manage fermentation and drying with the kind of attention that comes from doing everything themselves.
In 2006 Alexander committed fully to specialty coffee to add value and get recognition for his work. He spent time with the Café Quebradón group, picked up practical know-how, and then applied it back home - refining layouts, upgrading infrastructure, and tightening processes. The result is a farm that’s resilient (thanks to pitaya alongside coffee) and focused.
This lot is a Natural Pink Bourbon from La Piragua - a good snapshot of what Huila’s new generation is doing when they pair disciplined farming with thoughtful processing.
