Straight from Los Patios, Coffee Quest’s processing HQ in La Plata, Huila, Peach Please is their first successful co-fermentation using a Gesha variety - and honestly, it works beautifully.

 

The process starts on small farms across the region, sitting between 1,600 and 1,900 masl, where producers handle the first step: a 12-hour aerobic fermentation in cherry. After that, the de-pulped coffee is delivered to Los Patios, where the R&D team takes over.

 

There, they add a peach concentrate along with a proprietary solution developed to help transfer specific precursors during fermentation - not just for flavour, but also with bean quality and embryo preservation in mind. The coffee then goes through a 2-day fermentation and absorption phase, before drying slowly for 12 to 16 days, with constant monitoring to ensure consistency.

 

This is a fun, bold project that respects the delicate character of Gesha while taking it in a whole new direction, and they nailed it.
