Sebastian Mejía is a specialty coffee producer from the renowned Santa Bárbara region in Honduras. His farm, located in La Peña, sits at an elevation of approximately 1,550 meters above sea level. Sebastian cultivates varieties such as Parainema and Gesha, focusing on producing high-quality microlots.
The Parainema variety is a hybrid developed by IHCAFE (Honduran Coffee Institute) to resist coffee leaf rust and nematodes. It is known for its unique flavor profile, often exhibiting citrus and floral notes.
Sebastian's Parainema coffee undergoes a honey processing method, where the coffee cherries are depulped, and the mucilage is left intact during drying. This process contributes to the coffee's sweetness and complexity. Sebastian's dedication to quality and his innovative approach to coffee cultivation have made his offerings sought after in the specialty coffee market.
