When Jamison Savage moved to Panama with his family in 2008, he began a project that would take years to establish: growing exceptional coffee high in the cloud forests of Volcán.
Finca Deborah sits above 1,900 metres, where coffee trees grow beneath a rainforest canopy in volcanic soil. Cool temperatures slow the development of the cherries, while the remote mountain setting makes cultivation, harvesting and processing demanding work. It is here that Jamison built his reputation, combining careful farming with an increasingly ambitious approach to fermentation.
That work has earned the trust of some of the world’s best baristas. Berg Wu won the 2016 World Barista Championship in Dublin using a washed Geisha from Deborah. In 2024, coffees from the estate featured in the routines of all three podium finishers.
Interstellar explores another side of Jamison’s work through a technique called yeast inoculation. Yeast is the microorganism responsible for fermentation in bread, beer and wine. For this coffee, a selected yeast strain is introduced to carefully hand-picked, ultra-ripe Geisha cherries inside sealed tanks, helping guide the fermentation rather than leaving it entirely to naturally occurring microorganisms.
Throughout this extended fermentation, temperature and acidity are closely monitored. The cherries are then moved to raised drying beds, where they dry whole for up to 35 days, with regular turning to keep drying even. Only afterwards is the dried fruit removed to reveal the beans inside.
Interstellar brings together the patience of growing high-altitude Geisha and the precision of controlled fermentation. Its story is in that investment of time: years spent developing the farm, refining the process and making careful decisions at every stage.
