El Diviso is the Lasso family’s farm in the Pitalito region of Huila, Colombia. Established by Nestor’s parents, José Uribe and Marta Cecilia, it began as a small plot and gradually grew over the years. Their three sons, Jonathan, Adrián and Nestor, grew up helping with the harvest and processing coffee after school. Nestor became particularly interested in what happened after picking, and how changes in fermentation and drying could improve the coffee. Together with Adrián, he studied at SENA, Colombia’s public vocational training institution, building on the practical experience they already had from working on the farm.
For Nestor, specialty coffee offered a way to build a future in farming. Growing conventional coffee had brought limited returns, and many young people in the area were leaving for work in towns and cities. Focusing on quality gave the family a reason to invest further in their land and their skills.
Today, El Diviso remains a family effort. Nestor leads much of the processing and experimentation, while Adrián focuses on quality control, roasting and cupping. Jonathan works across the farm and business. Their approach involves testing, tasting and refining each process, paying close attention to fermentation time, oxygen, temperature and drying. That work reached the world stage in 2022, when Anthony Douglas won the World Barista Championship using a Sidra produced by Nestor at El Diviso.
Our lot is a Bourbon Ají, grown at approximately 1,750 metres above sea level and processed using an advanced washed method.
