Bright Yellow is the latest chapter in our partnership with Los Patios, Coffee Quest’s processing headquarters in La Plata, Huila. Just like Scarlet Extreme and Solsticio, this coffee was born from the curiosity and precision of the R&D team, who continue to experiment with fermentation and flavour transfer in order to expand what Colombian coffee can be.
The journey begins with smallholder producers farming at 1,600–1,900 meters above sea level, each working on plots that average just three hectares in size. On their farms, cherries undergo an initial 12-hour aerobic fermentation in cherry, a careful prelude that prepares the coffee for the innovation that follows. Once the coffee arrives at Los Patios in wet parchment, the R&D team takes over, guiding it through a pioneering co-fermentation process.
Here, a yellow fruit concentrate is combined with a proprietary solution designed to unlock and transfer aromatic precursors into the coffee. This stage lasts for two days, balancing fermentation with absorption, before the coffee is drained and moved to raised drying beds. Over 12–16 days, the beans are turned and monitored constantly to ensure an even, stable development, protecting both quality and consistency.
Throughout the design of Bright Yellow, the preservation of bean structure and embryo vitality remained a top priority. This focus ensures that the coffee not only achieves new flavour potential, but also maintains the physical integrity that roasters and baristas rely on.
Bright Yellow represents a breakthrough in co-fermentation at Los Patios - a successful step forward in intentional, repeatable coffee design. It reflects the creativity, patience, and dedication of both the farmers who deliver their cherries and the R&D team that transforms them into something entirely new.
