Papayo is a rare Colombian variety mainly found in Huila, named after its elongated, papaya-like cherries. While its exact genetics are still debated, it’s often linked to Ethiopian landraces, which helps explain its vibrant and expressive cup profile. In the cup, Papayo tends to lean towards tropical and citrus fruits, with a bright, juicy acidity and a clean, sweet finish. It’s a variety that’s been gaining attention in recent years for its clarity and complexity, especially when paired with careful processing.

We’ve tasted a lot of low caf over the years. Some are decent. Most are forgettable. But this one, made us stop everything. Not because it “doesn’t taste like low caf” (though it really doesn’t), but because it carries intention, family history, and bold innovation. Los Nogales is a 3rd-generation farm in Huila, run by the Hernández family. This Low Caf is one of their proudest projects. Typica is a low-yielding, disease-sensitive variety - not exactly a producer’s dream - but it’s known for its clarity and elegance.
