A true rarity on our shelf. Ombligón is one of those coffees that has quietly started making waves in competition circles, but is still almost impossible to find. The name comes from the Spanish ombligo - meaning belly button - a playful reference to the bean’s distinctive dimpled shape.

 

This lot comes from Yesid, at Finca Villa María in Saladoblanco, Huila - a region known for its high elevations, rich soils, and producers who aren’t afraid to experiment. It’s a washed honey and panela co-fermented coffee: sweet, vibrant, complex, and full of character, with that comforting depth that makes it easy to fall in love with.

 

What makes Ombligón fascinating is how little we actually know about it. Its exact genetic background isn’t documented - it’s believed to be a natural mutation, possibly linked to Ethiopian landraces or older local Colombian varieties. The beans are dense, large, and need special care during processing, which only a handful of producers are willing to take on.

 

That combination of rarity, risk, and reward is exactly what makes Ombligón so special. It’s one of those varieties that remind you why coffee can still surprise us - even after all these years.
