This lot is a collaboration between Catur Coffee and Lamastus Family of Elida Estate.

 

Catur Coffee is a joint venture aimed at improving the coffee production scene in Indonesia. It was founded in 2020 by Mikael Jasin, World Barista Championship (WBC) 2019's 3rd runner-up and WBC 2021's 5th runner-up, in response to a rule implemented in 2018 that required all coffee used in the country’s regional Barista Championship heats to be home-grown.

Catur utilises different strains of yeast to derive flavour within the cup; four different flavour categories are being created throughout the six processing facilities: Bumi, Senja, Pucuk and Kamala.

 

Our lot is “Senja” processed - which means sunset in Sanskrit. Just like the different colours and stages of the sunset, this taste profile is signified by a combination of deeper and complex vibrancy with an accompanying fruity sweetness and rounded body.

Senja utilises blending techniques as well as bacteria and fungi-based inoculants.

 

Elida Estate, located in the lush region of Boquete, Panama, has established itself as a leading producer of high-quality coffee. Their reputation for excellence has been cemented by their numerous accolades, including winning the prestigious Best of Panama award, as well as being the preferred choice of many world champions.

 

Elida Estate has been run by the Lamastus family for four generations, starting in 1918 when the founder of the farm, Robert Lamastus, bought property along the Baru Volcano. There are three farms in the Lamastus family: Elida Estate, El Burro Estate, and Luito Geisha Estate.

 

About half of the Elida Estate farm is located within the Volcan Baru National Park, which is a protected ecological reserve and sanctuary for exotic plants, birds, butterflies, and mammals, such as the tropical tiger. The natural qualities of the National Park enrich Elida's terroir. The coffee plants grow in this magnificent environment, ranging in elevation from 1670m up to 2060+m above sea level. These factors contribute to the uniqueness of this coffee.

 

Although they grow many different types of coffee, the Lamastus family is known around the world for their Gesha coffee variety. Thanks to their expert processing and the Elida Estate's environment, their coffee regularly scores above 90 points. In 2019, they won the Best of Panama auction with a record-breaking sale of $1,029 per pound, making headlines worldwide and appearing on several magazine covers.

 

Process.

The fresh, ripe cherries are picked, and the floaters are sorted. Then, the cherries are inoculated with a Geisha mosto from Elida Estate and left to ferment for approx—96 h in plastic tanks.
After the fermentation reaches the desired pH, the cherries are pulped from the fruits, leaving the mucilage on the beans as much as possible.
The beans are rested for 12 hours before the mucilage is washed off with a demucilager. The washed beans are then slowly dried on raised beds and under shade for three weeks.

Because of the high altitudes where the coffee is grown, the beans are very dense and uniform, and they are mild with a medium body, good aroma, and high acidity.
