Juan David Chinchilla has been connected to coffee all his life. Growing up in the countryside, he learned from an early age that coffee was not just a crop, but part of his family’s daily rhythm and identity. Over the years, this connection grew into a commitment to continue the work of his parents and to dedicate his own path to coffee farming.

 

At La Cumbre, his farm in Palermo, Huila, Juan David focuses on producing specialty coffee with great care and discipline. For him, quality begins in the details: harvesting only ripe cherries, maintaining clean and organized processing areas, and applying thoughtful fertilization to keep the plants healthy and productive. These practices, carried out consistently over time, are what allow him to build trust in his work and to share coffee that meets the highest expectations.

 

Environmental care is also central to his vision. Juan David protects nearby forests and natural water springs, understanding that preserving these resources is essential not only for coffee production but also for the well-being of future generations. Alongside coffee, he cultivates plantain, cassava, and corn, creating balance and diversity on the farm while strengthening its resilience.

 

What he values most about coffee is the stability it provides. Each harvest represents more than an income - it is the opportunity to support his family, reinvest in the farm, and sustain a way of life that has been passed down for generations. For Juan David, coffee is both heritage and future, a livelihood that demands hard work but also brings the satisfaction of seeing his efforts transformed into something meaningful, shared across the world in every cup.

 

Papayo is a rare Colombian variety mainly found in Huila, named after its elongated, papaya-like cherries. While its exact genetics are still debated, it’s often linked to Ethiopian landraces, which helps explain its vibrant and expressive cup profile. In the cup, Papayo tends to lean towards tropical and citrus fruits, with a bright, juicy acidity and a clean, sweet finish. It’s a variety that’s been gaining attention in recent years for its clarity and complexity, especially when paired with careful processing.
